Potluck Recipe Exchange

Deb’s having a house warming party and we’re all invited. I’m taking Butternut Squash Soup accompanied by some of my favourite focaccia.


Put a large knob of butter and a generous splash of olive oil into a large saucepan. Gently fry one large (chopped) onion for a few minutes.

Add one large (peeled and chopped) butternut squash and 2 (cored and chopped) cooking apples.

Put the lid on and gently sweat until softened. Pour in 1 1/2 pints of vegetable stock and simmer until the squash is cooked.

Leave to cool slightly, then blitz with a hand blender and season to taste.

Add a swirl of cream to serve, if desired.

Fi, I am SO EXCITED with your recipe. I have a large container of diced butternut squash in the fridge and I couldn't decide if I wanted make soup or roast it. I've never done anything with it @@ Now, I'll be making soup!! Love your self portrait :)

As much as I hate to admit it, we have finished summer and are well and truly seeing the beginning of soup season. I love soup and your recipe is just the sort we would all enjoy - I expect it will make an appearance on our tables very soon!

As some who has tasted Fi's soup, I am delighted to say, it was gorgeous!! and I am going to try and make some myself... Great idea to have the bread with it too!!
