Just a quickie!

Easter holidays here, so it has to be a quick recipe today, but it’s still a good one.

Quick smoked mackerel pate

1 pack smoked mackerel fillets (approx 200g)

2 tbsp cottage cheese

1 tbsp creme fraiche

juice of half a lemon

freshly ground black pepper

It’s entirely up to you whether or not you remove the skins from the fish.

Put all the ingredients in a food processor and pulse until you have the texture you like. That’s it!

Spread thickly on crusty wholemeal bread or toast.

If you are counting the calories, then substitute half fat/low fat versions of the cottage cheese and creme fraiche and spread on ryvita instead.

Enjoy!

I cooked the creamy tomato risotto again the other day and remembered to take a photo this time! I've added the image to the original post, for anyone who would like to see the finished dish.

I made this once and loved it but then I lost the recipe you gave me so I'm so glad you've posted it again, thanks Fi x

You're welcome Jo:)
Me too Sian! Unfortunately the rest of my family are pretty keen on it, so I don't get the opportunity! Fx

Oh yummy Fiona I love smoked makeral pate. Im not keen on cottage cheese 0 its the lumpy texture but I think it will be okay in this :)

Yummy! Sounds so nice. I would like to try it worth other fish too... like tuna perhaps, also tinned fish. I'm sure it would be quite an afaptable recipe. Thank you.

Sounds yummy. If only there was a dairy-free way of doing this.
